Pomegranate Kosumbri | How to make pomegranate Kosumbri | Medley-Of-Flavours

Kosumbri is a simple South-Indian salad usually made of split green gram, to add a twist in it here I am using Pomegranate. It is very refreshing and a healthy dish to be served in lunch or dinner along with main course.


Ingredients:
  1. 2 Pomegranate
  2. 1 tsp oil
  3. 1/2 tsp Mustard seeds
  4. 1/2 tsp red chili powder
  5. Salt
  6. 1 tbsp coconut
  7. 1 tsp coriander leaves
  8. 1/2 lemon

Preparation:

  • Cut open the pomegranate. Remove pomegranate seeds in a bowl.
  • for tempering take tadka pan heat some oil.
  • Add mustard seeds to it and let it cool down.

How to make pomegranate kosumbri:

  • In the bowl of pomegranate seeds add red chili powder.
  • Add salt and mix well.
  • Now add tempering into it.
  • Finally add grated coconut and finely chopped coriander leaves.
  • Squeeze half lemon. 
  • Mix everything well.

Notes:

  • Always make sure the tempering is cooled down.
  • If tempering is added while hot it might change the taste of the fruit.

How to set Curd | Homemade curd |Medley-Of-Flavours

Curd is most commonly consumed dairy product. It can be just consumed as it is Or even used to make many other dishes. Most of the people buy it. But it is very easy to make it at home by following these few steps.


Ingredients:

  1. 500 ml milk
  2. 2 tsp Curd
  3. 2 tsp water

Preparation to set Curd:

  • In a cup mix milk and water together and make butter milk.
  • In a hot bottom pan heat full fat milk.
  • Make sure you stir milk while heating, so that it doesn't get burnt.
  • Let the milk cool down till it is warm.
  • A thick layer of malai is formed on top of it, remove it.

How to set curd:

  • Add butter milk to warm milk and mix well.
  • Now take a bowl in which you want to set the curd.
  • Pour the milk and buttermilk mixture into the bowl.
  • Close it with a lid and let it set for 5- 6 hours.

Tips:

  • Keep the bowl in a close cabinet or a microwave in off mode.
  • Or you can invert a larger bowl on it.
  • In winters it might take longer time to set. You can add one more tsp of buttermilk to it.
  • Do not use sour curd for better taste of curd.

Tomato Onion Curry | Medley-Of-Flavours

Tomato Onion curry is a tangy curry usually served with chapati/roti, puri and even tasty good when served with white rice.



Ingredients:

  1. 2 Tomatoes
  2. 2 Onions
  3. 1/4 cup roasted chana dal
  4. 3 tbsp grated coconut
  5. 1 tbsp Tamarind
  6. 1 tbsp Jaggery
  7. 5-6 Red chilies
  8. Oil
  9. 1 tsp Mustard seeds
  10. Pinch of Hing
  11. Curry leaves
  12. Salt
  13. 2 cups Water
  14. Coriander leaves

How to make tomato onion curry:

  • Chop tomatoes and onions into large pieces. Keep them aside.
  • In a mixer jar take roasted chana dal,coconut, red chilies, tamarind, jaggery grind them into paste by adding some water.
  • In a kadhai, heat some oil add mustard seeds to it and let them splutter.
  • Now, add hing, curry leaves and chopped tomatoes & onions.
  • Saute them well. 
  • Add grinded mixture into the kadhai.
  • Add water to adjust consistency of the curry.
  • Add salt to taste and mix well.
  • Mix everything well. Cook it till the curry is completely boiled.
  • Garnish it with coriander leaves

Pineapple Pulp Jam recipe | Home made

Love fruit bread spreads? Like to eat everything homemade? Then you must try this home made pineapple jam. It is made of  pineapple pulp and it is easy to make. Since pineapple contains enzymes that helps you to digest your food easily it is healthy as well.


Ingredients:

  1. 1 pineapple
  2. 1/4 Cup water
  3. 8 tbsp Sugar
  4. 1 tsp lemon juice
  5. Salt

Preparation:

  • Heat a pan.
  • Take pineapple pulp from a pineapple.
  • Add pineapple pulp and water into the pan and cook it for about 15 mins.
  • Add sugar and pinch of salt to pineapple.
  • Mix it well and cook for another 20 mins.
  • Or cook until the mixture thickens.
  • Add lemon juice and mix well.

Storage:

  • Store the jam once it is cooled down completely in an air tight container.
  • Lasts at-least 3 months when stored in refrigerator.

Ingredients:

  1. 1 Cucumber
  2. Pudina chutney
  3. 2 Tomato
  4. 1 Onion
  5. Sev
  6. 1 Carrot
  7. Red chili powder
  8. Coriander power
  9. Chat Masala
  10. Salt
  11. Imli chutney

Preparation:

  • Chop onions and tomatoes into small pieces.
  • Peel off the skin of carrot and grate it using a grater.
  • Peel off the skin of cucumber.
  • Cut cucumber into discs. Place it on a serving plate.
  • Spread pudina chutney on each slice of cucumber.
  • Now put onions, grated carrot, tomatoes on to the cucumber.
  • Sprinkle chili powder,coriander powder,chat masala,salt and sweet chutney according to your taste.
  • Finally add sev to it.


Time: 10 min
Servings: 1

  • You can customize this recipe with other ingredients as well according to your taste and liking.

Imli Chutney | Metha | Medley-Of-Flavours

Imly chutney also referred as metha is a made of tamarind and jaggery. Usually served with North Indian chaats like samosa, kachori, paani puri etc.

Ingredients:

  1. 1/2 cup Tamarind
  2. 1 n 1/2 cup Jaggery
  3. 4 tbsp Dry grapes
  4. 6 Dates
  5. 1 tsp Jeera
  6. 1/4 tsp salt
  7. 1 cup water

Preparation:

  • In a pan dry roast jeera for a while.
  • In a mixer jar, take dry roast jeera, tamarind, jaggery, dry grapes, dates, salt.
  • Grind everything.
  • In a bowl add water and grind paste into it.
  • Mix everything well.
  • Strain the mixture with a strainer.
  • Heat the mixture in the same pan till bubbles are seen.
Time: 15 mins

Note:
  • Store this chutney in an air tight container for long life.

Carrot halwa recipe | Gajar ka halwa | How to make carrot halwa

Carrot halwa is a panjabi sweet dish. Made out of carrots, milk, sugar. In this recipe I am using both condensed milk and sugar. You can add khoya as well. This recipe does not include khoya. Wondering how to make a a rich creamy carrot halwa with out khoya. Check out the recipe below. 

Ingredients:

  1. 1/2 Kg carrot
  2. 400 ml Milk
  3. 200 ml condensed milk/ milkmaid
  4. 6 tbsp Sugar
  5. Dry fruits
  6. 2 tsp ghee
  7. 1/2 tsp cardamom powder

Preparation:

  • Wash the carrots with water. Peel off the skin of carrots.
  • Using a grater grate carrots.

How to make Carrot halwa:

  • Dry roast dry fruits of your choice.
  • Let it cool down and chop them into pieces.
  • In a thick bottom pan start heating milk.
  • Once milk start boiling add grated carrot into it.
  • Mix and cook carrot till the milk reduces.
  • It might take around 40-45 minutes. 
  • Now add condensed milk and sugar mix everything well.
  • Let sugar melt and then add ghee and dry fruits mix everything well.
Preparation time: 15 mins
Cooking time: 50- 60 mins
Servings: 3

Notes:
  1. Condensed milk can be completely replaced with sugar.
  2. Cook the halwa on low to medium flame.
  3. This recipe can also be cooked in pressure cooker.
  4. This can be stored in fridge for about 6 to 7 days in refregirator.

Ingredients:

  1. 1 tbsp tea powder
  2. 1 n 1/2 tbsp sugar
  3. 50 ml water
  4. 200 ml milk

Preparation:

  • In a saucepan, boil tea powder, water and sugar together.
  • Now add milk to it and mix well.
  • Boil it for 4-5 mins.
  • Using a strainer strain tea into serving glass/cups.
Notes:
  1. You can adjust the quantity of milk and water according to your taste.

Pineapple juice is a rich juice among fruit juices. It has high quantity of  Vitamic-C, minerals. This is a very healthy juice which gives instant energy.



Ingredients:

  1. 1 Pineapple
  2. 2 tbsp sugar
  3. 1/4 tsp salt
  4. 1/4 tsp pepper
  5. 1/4 tsp Nutmeg(optional)
  6. 1/2 cup Water

Preparation:

  • Chop pineapple into pieces.
  • In a blender, take pineapple, sugar, salt, pepper, nutmeg powder.
  • Blend them together.
  • Now add water and blend it again.
  • Using a strainer strain the juice.
  • Serve it in a glass.

Notes:
  • Do not throw away pineapple pulp.
  • It can be used to make pineapple jam, or even can be used in gravies.

Coffee/Cappuccino | Medley-Of-Flavours

Coffee/Cappuccino one of the everyday consumed beverage. It can be very easily made at home without coffee machine just like cafe cappuccino by following these few simple steps.

Ingredients:

  1. 1 tbsp Coffee
  2. 1 n 1/2 tbsp sugar
  3. 250 ml milk

Preparation:

  • In a coffee mug or a glass take 1 tbsp coffee, sugar and mix well.
  • Add 1/4 tsp of milk and mix well.
  • Add another 1/2 tsp milk keep mixing.
  • Mix coffee until the sugar mels.
  • Keep beating the coffee till it turns to light brown colour.
  • Heat milk in a saucepan.
  • Add milk into the coffee mug and mix well.
  • Home made cafe like Cappuccino is ready to serve. 


Notes:

  1. You can substitute milk with water while mixing coffee and sugar.
  2. Use full fat milk for more creamy taste.

Bisi bele bath | Medley-Of-Flavours

Bisi bele bath is a traditional South-Indian dish mainly originated in karnataka. It has the flavours of most of the spices. It is a wholesome rice meal. Usually served along with Raita, Bondi or even tastes great with potato chips.


Ingredients:

  1. 1 cup Rice
  2. 3/4 cup Toor dal
  3. 2 Potato
  4. 2 Carrot
  5. 5-6 Beans
  6. 5 cups water
  7. 5 tomatoes
  8. 4 tbsp Coconut
  9. 3 tbsp Homemade masala powder
  10. 4 tbsp Oil
  11. 4 tbsp Ghee
  12. 1 tsp Mustard seeds
  13. Pinch of Hing
  14. Curry leaves

Preparation:

  • Wash rice,toor dal and vegetables.
  • Chop the vegetables.
  • In a pressure cooker take rice, toor dal, vegetables, water and cook till 2 whistles.
  • In a mixer jar, take grated coconut, Homemade masala powder, salt, tomatoes and grind them.
  • In a kadhai, heat ghee and oil together.
  • Add mustard seeds and let them pop.
  • Add curry leaves, hing and tomato mixture and saute well.
  • Now add cooked rice and vegetables mixture.
  • Adjust consistance by adding water if needed.
  • Bisi bele bath is ready to serve.
Time: 35 min
Servings: 2

Note:


  • You can replace Rice with millets.

Homemade masala powder | Medley-Of-Flavours

Homemade Masala powder is perfect blend of spices. This powder can be used to make most of the recipes like vangibath, bisi bele bath, this can also be used to make sambar as well. Any recipe tastes great with this powder.

Ingredients:

  1. 1 Cup Urad dal
  2. 1 Cup Chana dal
  3. 12 Red chilies
  4. 12 Wrinkled red chilies
  5. 5 tbsp Coriander seeds
  6. 2 tbsp Jeera
  7. 2 Cinnamon sticks
  8. 1 Star anise
  9. 6 Cloves
  10. 4 Pepper corns
  11. 2 Bay leaf
  12. 1 Mace
  13. 1 Stone flower

Preparation:

  • In a frying pan dry roast each ingredient for a while.
  • Let everything cool down.
  • In a mixer jar add all the ingredients together and grind.
  • Store the powder in an air tight container. 

Note:

  • Store the powder in a dry place.

Onion Chutney | Medley-Of-Flavours

Onion chutney can be served with roti or tastes good with rice as well.

Ingredients:

  1. 2 large onions
  2. 3 Red chilies
  3. 8 Wrinkled dry red chilly
  4. 1 tbsp Jaggery
  5. 1 tbsp Tamarind
  6. Salt
  7. 4 tbsp Oil
  8. 1/2 tsp Mustard seeds

Preparation:

  • In a mixer jar, take red chilies, wrinkled red chilies, jaggery, tamarind extract grind everything to coarse mixture.
  • Finally cut onions into large pieces and add it to mixer jar and grind it to coarse mixture.
  • In a pan heat oil, put mustard seeds. let them pop.
  • Add onion chilli mixture into the pan.
  • Mix well and cook.
  • Cook till oil releases from from onion mixture.

Note:

  1. Lasts 1 week when stored in refrigerator.
  2. Cook on medium flame.

Bread Upma | Snacks | Medley-Of-Flavours

Bread Upma recipe is a tasty tea time snack or even served as breakfast . It is made by tossing bread in some onions, tomatoes along with some spices it has tangy twist in it.


Ingredients:

  1. 10-12 Bread slices
  2. 2 Onions
  3. 4 Tomatoes
  4. 3 green chilies
  5. 1 tsp red chilly powder
  6. 1 tbsp finely chopped garlic
  7. 1 tbsp coriander powder
  8. 1 tsp Jeera
  9. Salt
  10. 1 tsp amchur powder
  11. 4 tbsp Butter
  12. 1 tbsp Ketchup
  13. Coriander leaves
  14. Water
  15. 1 lemon
  16. 1/4 tsp Hing

Preparation:

  • Cut bread into small pieces.
  • Chop onions, garlic and tomatoes finely.
  • In a frying pan heat butter, add jeera, split green chili, finely chopped garlic, hing.
  • Saute till raw smell of garlic is gone.
  • Add onions and fry them till it turns translucent.
  • Now, add tomatoes let it cook for a while.
  • Add some water close the pan with a lid and let the tomatoes cook completely.
  • Now, add coriander powder, red chili powder, amchur powder, salt and mix well.
  • Add bread pieces and toss it for a while in frying pan.
  • Coat the bread nicely with masala.
  • Finally squeeze a lemon into it,add coriander leaves and mix well.
  • Bread Upma is ready to serve.

Note:

  • You can substitute chopped tomato with tomato puree. 
  • You can use Pav or Bun instead of bread.
Time taken: 20-25 mins

Fruit custard | Fruits | Medley-Of-Flavours

Fruit custard is a fruit salad made using custard sauce. It is served as a dessert.

Ingredients:

  1. 500 ml Full fat Milk
  2. 3 tsp Vanilla Custard
  3. 5 tbsp cup sugar
  4. 1 n 1/2 Cup of fruits(of your choice)

Preparation:

  • Take 50 ml of milk in a bowl and mix custard powder to it.
  • Boil remaining milk and sugar in a pan.
  • Add custard mixture slowly into the milk.
  • Keep stirring simultaneously. 
  • Make sure that no lumps are formed. 
  • Milk starts thickening and changes to darker shade of yellow.
  • Let it cool down.
  • Once it is cooled add fruits and mix well.
  • Refrigerate custard in refrigerator and serve chilled.

Note:

  1. This recipe tastes best with vanilla custard.
  2. Tastes best when served chilled.
  3. Use full fat milk for best results.

Cooking Time: 20 mins

Pudina / Mint Chutney recipe | Medley-Of-Flavours

Pudina chutney is very healthy recipe, while mint acts like soothing component for our body. It also helps to get rid of indigestion problems. It also helps in fast digestion of food.

Ingredients:

  1. 300 gm pudina/ mint leaves
  2. 150 gm Coriander leaves
  3. 2 inches ginger
  4. 2 garlic
  5. 2 strips of Tamarind
  6. 2 tbsp Jaggery
  7. 2 tsp Jeera
  8. 14 green chilies
  9. 2 tsp Coriander seeds
  10. Rock Salt
  11. Black Salt(optional)
  12. Water

Preparation:

  • In a mixer jar, take ginger, garlic, tamarind, jaggery, jeera, green chilies,coriander seeds, rock salt, black salt and blend to coarse powder.
  • Now add pudina/mint leaves and coriander leaves to it.
  • Blend everything together with 1 tbsp water and make a paste like consistency.
  • Pudina/mint chutney is ready to serve.

Note:

  1. Pudina chutney goes very well with any chaat it enhances the taste of any snack/chaat. 
  2. Pudina chutney tastes amazing and can be stored more than 6 months when stored in freezer.
  3. Make sure you store it in an air tight container.

Choco Fudge | Medley-Of-Flavours

Choco Fudge is a yummy chocolate dessert cooked with cocoa, butter and lots of condensed milk.

Ingredients:

  1. 250 ml Milkmaid
  2. 70 ml Milk
  3. 2 tsp Cocoa powder
  4. 20 gms Milk powder
  5. 4 tbsp Butter
  6. Mixed dry fuits

Preparation:

  • In a pan melt butter.
  • Add milk powder and cocoa powder i it and mix well.
  • Now, add milk & milkmaid and mix well.
  • Mix dry fruits into it.
  • Keep mixing till the mixture releases butter.
  • Grease a flat tray.
  • Pour the mixture into a tray and let it set.
  • Cut fudge into pieces and serve.
Time: 25 mins
Servings: 7-8 pieces

Palak Dal | Spinach Dal | Medley-Of-Flavours

Palak dal is a healthy dal recipe. High in Iron contents and a lots of nutrients also low in calories.

Ingredients:

  1. 250 gms Spinach
  2. 1/4 cup Toor dal
  3. 1 tbsp Oil
  4. 1 tsp Mustard seeds
  5. 1 tsp Jeera
  6. Curry leaves
  7. Pinch of Hing
  8. 1/4 tsp Turmeric
  9. Salt
  10. Water
  11. 7 Green chilies
  12. Fried onions for garnish

Preparation:

  • Chop spinach and green chilies.
  • Pressure cook toor dal in a cooker with water till 2 whistles.
  • Let the pressure release completely. Add turmeric and salt to taste and keep aside.
  • In a kadhai heat some oil. Add mustard seeds into it and let them splutter.
  • Now, add jeera, hing, curry leaves, finely chopped green chilies and chopped spinach saute for a minute or so.
  • Mix cooked toor dal into this. Add water to adust the consistency.
  • Cook till bubbles are formed on top of dal.
  • Garnish it with some coriander leaves and fried onions.
  • Palak dal is ready to be served.

Toor dal Recipe | Medley-Of-Flavours

Toor dal which is also known as pigeon peas goes very well with rice or even roti.

Ingredients:

  1. 1/4 cup Toor dal
  2. 1 tbsp Oil
  3. 1 tsp Mustard seeds
  4. 1 tsp Jeera
  5. Few garlic cloves
  6. Curry leaves
  7. Pinch of Hing
  8. 1/4 tsp Turmeric
  9. Salt
  10. Water
  11. 9 Green chilies
  12. Few Black pepper corns

Preparation:

  • Pressure cook toor dal in a cooker with water till 2 whistles.
  • Let the pressure release completely. Add turmeric and salt to taste and keep aside.
  • In a kadhai heat some oil. Add mustard seeds into it and let them splutter.
  • Now, add jeera,garlic cloves, hing, pepper corns, curry leaves, split green chilies and saute for a minute or so.
  • Mix cooked toor dal into this. Add water to adust the consistency.
  • Cook till bubbles are formed on top of dal.
  • Garnish it with some coriander leaves.
  • Toor dal is ready to be served.

Paneer roll | Paneer Frankie | Medley-Of-Flavours

Paneer roll is a snack recipe. Paneer tikka is stuffed or rolled in a paratha or chapati along with some freshly chopped onions or any other veggies.


Ingredients:

  1. 3/4 cup wheat flour
  2. 3/4 cup all purpose flour(Maida)
  3. Water
  4. Oil
  5. Salt
  6. 150 gm paneer (cottage cheese)
  7. 1/2 cup curd
  8. 1 tsp Red chili powder
  9. 1/2 tsp amchur powder
  10. 1/2 tsp Chat masala
  11. 1/2 tsp Cumin powder
  12. 1/2 tsp kasuri methi
  13. 1/2 tsp coriander powder
  14. 2 Capsicum
  15. 2 Onion
  16. Ketchup

Preparation:

  • In a mixing bowl take wheat flour, all purpose flour, 2 tsp oil salt to waste mix them well.
  • Add water as required and make a dough. Keep it aside and cover it with a wet muslin cloth.
  • After 10-15 mins knead the dough again.
  • Chop onions and capsicum and keep aside. Make paneer to small cubes.
  • In a bowl take curd, chili powder, amchur powder, chat masala, jeera powder, kasuri methi, salt and mix well.
  • Add paneer cubes and into the curd mixture and mix well. Keep it aside for 10-15 mins.
  • Heat some oil on a frying pan, saute half of the chopped capsicum and onion in it for 2 mins.
  • Do not over cook. Add paneer marination into the pan.
  • Cook for 5 mins.

  • Take a small portion of dough and make roti out of it using rolling pin.
  • Place a roti on a tawa and cook both the sides with some oil. 
  • Keep the paneer mixture in middle of cooked roti.
  • Spread some ketchup and chopped onion n capsicum on paneer.
  • Roll the roti into a wrap. 
  • Feel free to add some freshly chopped green chillies if you like spicy rolls.

Cooking time: 40 min

Potato Rice | Medley-Of-Flavours

Potato rice is one of the great lunch box recipes. It tastes great and easy to cook.

Ingredients:

  1. 5 potatoes
  2. 2 onions
  3. Oil for deep fry
  4. 1 cup peas
  5. 1 tsp Jeera
  6. 1 n 1/2 cup rice
  7. 4 cup water
  8. 1 n 1/2 tsp ginger garlic paste
  9. 10 green chillies
  10. 1/2 tsp Dhaniya powder
  11. 1 tsp Garam masala
  12. 1/2 tsp Cumin powder
  13. Salt to taste

Preparation:

  • In a pressure cooker, take rice,water,peas and cook till 2 whistles.
  • Chop potatoes into cubes and deep fry till it turns light golden brown.
  • Take a pan and heat 3 tsp oil.
  • Add jeera and chopped onions saute them well.
  • Add ginger garlic paste, split green chillies, dhaniya powder, jeera powder,garam masala powder, salt and mix well.
  • Now add deep fried potatoes, cooked rice and peas together and mix well.

Cooking time: 40 mins

Aloo Sandwich | Potato Sandwich | Medley-Of-Flavours

Aloo/potato sandwich is easily made of boiled aloo/potato and few spices added into it.

Ingredients:

  1. 3 Potatoes
  2. 1 onion
  3. 1 tsp Jeera / cumin powder
  4. 1/2 tsp Red chilly powder
  5. 1/2 tsp Garam masala
  6. 1/2 tsp Amchur powder
  7. 2 green chilies 
  8. Coriander leaves
  9. Salt
  10. Butter
  11. Bread

Preparation:

  • Boil or steam potatoes till they are cooked completely.
  • Let them cool down. Mash them.
  • To mashed potato add chopped onion, cumin powder, finely chopped green chilies, red chilly powder, amchur powder, garam masala, salt,finely chopped coriander and mix well.
  • Potato stuffing is ready.
  • Take a slice of bread spread butter on one side of bread.
  • On the other side place the potato filling and cover it with another slice of bread.
  • Heat a frying pan or tawa, place bread on it.
  • Cook it on both sides until it turns brown color and crispy.
  • Slice sandwich into pieces and serve with ketchup.

Garlic Rice recipe | Medley-Of-Flavours

Garlic Rice is a must try recipe for some one who loves garlic. It is easy to make with added flavours of garlic, red chillies and black pepper in it.

Ingredients:

Preparation:

  1. Cook rice with water in a pressure cooker.
  2. For tempering heat oil in a kadhai.
  3. Put jeera and urad dal, garlic to it. Let it turn light brown colour.
  4. Now add red chillies and saute well.
  5. Add rice to the tempering and mix well.
  6. Lastly add Salt to taste and pepper powder.
  7. Garnish it with coriander.
  8. Garlic rice is ready to serve.

Sugar Chapati | Caramel Chapati | Medley-Of-Flavours

Sugar chapati is made of sugar and ghee. Also called sweet/caramel chapati.

Ingredients:

Preparation:

  • In a bowl mix wheat flour, salt and oil together.
  • Add water slowly mix well and make chapati dough.
  • Cover the dough with wet cloth and let it rest for 10-15 mins.
  • Take some flour on a flat surface.
  • Take small portion of dough and cover it with flour.
  • Place dough on rolling surface and roll it using rolling pin.
  • Roll the dough into a small disc. 
  • Put 2 tsp sugar and ghee in the middle of it and mix well.
  • Bring the edges of disc together. Join the edges and press it in the center.
  • Dust it with some flour and start rolling it again to 5-6 inch diameter approximately.
  • Heat a tawa or frying pan.
  • Cook both sides of chapati till it turns golden brown colour.

Servings: 4 to 5 chapatis

Sabudana Upma | Sago Upma | Medley-Of-Flavours

Sabudana/ Sago upma is a easy breakfast recipe. Usually served as a fasting recipe.

Ingredients:

  1. 1/2 cup Nylon Sago
  2. 3 tbsp Oil
  3. 1 tsp mustard seeds
  4. 1 tsp jeera
  5. 1 tsp Urad dal
  6. 4-5 curry leaves 
  7. 6 green chillies
  8. Salt
  9. Coriander leaves
  10. 1 tbsp lemon juice

Preparation:

  • Soak nylon sago over night.
  • In a kadhai heat oil.
  • Put mustard seeds and let them pop.
  • Add jeera, urad dal and let it turn golden brown.
  • Add curry leaves,green chillies and saute well.
  • Now add sabudana and mix well.
  • Let the sabudana turn translucent. Add lemon juice and mix well.
  • Finally garnish it with finely chopped coriander leaves.

Kesar Phirni | How to make Kesar Phirni | Medley-Of-Flavours

Phirni is a North Indian delicious sweet dish usually prepared with rice grains and milk. It is mostly served in earthen pots.


Ingredients:

  1. 3 tbsp Rice
  2. 500 ml milk
  3. 1/4 cup Sugar
  4. 1/4 tsp cardamom powder
  5. 1/4 tsp Kesar
  6. Dry fruits/ some more kesar for garnish.

Preparation:

  • Soak rice in water for 2 hours.
  • Grind rice with 2-3 tsp of water into a coarse mixture.
  • Boil 450 ml milk in a kadhai
  • In a bowl take 50 ml milk and add kesar to it. Let it soak till milk comes to boil.
  • Add rice mixture into milk. Let it boil for few minutes.
  • Add kesar and milk mixture and mix everything well. 
  • Mixture starts getting thick after a while.
  • Add cardamom powder and mix.
  • Serve it in earthen pots with chopped dry fruits/ kesar.

Sweet Pongal | How to make Sweet Pongal | Medley-Of-Flavours

Sweet pongal is a sweet dish usually made in South-India. Specially cooked on a festival called Pongal. 


Ingredients:

  1. 1 cup Rice
  2. 3/4 cup Moong dal
  3. 5 cups water
  4. 2 cups milk
  5. 2 tbsp Ghee
  6. Chopped dry fruits
  7. 2 cups Jaggery

Preparation:

  • Pressure cook rice and moong dal with water till 5 whistles.
  • Let pressure release completely.
  • In a Kadhai heat jaggrey and water together till one string consistency.
  • Now, add cooked rice n dal mixture to this.
  • Add milk and sugar and cook it for some time.
  • In a tempering pan heat ghee.
  • Add dry fruits to it. Let them turn golden.
  • Add dry fruits and ghee to the rice mixture and mix them well.
  • Sweet pongal is ready to serve.

Pongal | Rice Dish | Medley-Of-Flavours

Pongal is a South-Indian dish made with rice, moong dal and milk as main ingredients. 

Ingredients:

  1. 1 cup Rice
  2. 3/4 cup Moong dal
  3. 5 cups water
  4. 2 cups milk
  5. 2 tbsp Oil
  6. 2 tbsp Ghee
  7. 1 tsp mustard seeds
  8. 1 tsp Jeera
  9. A pinch of asafoetida (hing) 
  10. Curry leaves
  11. 10-12 black Pepper corns

Preparation:

  • Pressure cook rice and moong dal with water till 5 whistles.
  • Let pressure release completely.
  • In a deep pan heat oil and ghee together.
  • Add mustard seeds and let them pop.
  • Then add jeera,curry leaves, hing and pepper saute well.
  • Add cooked rice and dal mixture to it.
  • Add milk to it.
  • Now add salt to taste. Mix well.
  • Serve with Imli chutney.
