Ingredients:
- 5 tbsp Oil
- 3 small brinjal
- 1 cup Rice
- 2 n 1/2 cup water
- Curry leaves
- 1/4 tsp Turmeric
- 1 tsp Chana dal
- 2 tsp Urad dal
- 2 tbsp Homemade masala powder
- Salt
- 1 Lemon
- Coriander leaves
Preparation:
- Wash Brinjal, curry leaves, coriander leaves separately twice or thrice with water.
- Chop brinjal and coriander leaves.
- Wash rice with water twice.
How to make Vangibath:
- In a pressure cooker cook rice, water till cooked or for 2 whistles.
- Let it cool down.
- In a kadhai heat oil add mustard seeds, let them pop.
- Add chopped brinjal and saute till it is cooked well.
- Add chana dal,urad dal curry leaves,turmeric.
- Saute everything well.
- Add cooked rice, Homemade masala powder, salt.
- Squeeze a lemon and mix everything well.
- Add chopped coriander leaves.
- Vangibath is ready to serve.
Cooking time: 25 mins

Tip:
- Make sure rice is completely cooled down to avoid stickiness.
