Potato Masala for Poori | Aloo Masala Recipe | Medley-Of-Flavours

Potato masala is a South-Indian recipe and it's the most common dish served along with Poori. It is simple to make and tastes great. Check out the recipe below. This can also be served with chapati/pulka.



Ingredients:

  1. 4 Potatoes
  2. 2 onions
  3. 6-7  green chilies
  4. 2 tbsp roasted chana dal powder
  5. Water
  6. Salt
  7. 6-7 Curry leaves
  8. 2 tbsp Oil
  9. 1/4 tsp Mustard seeds
  10. Coriander 
  11. 1 tbsp Chana dal
  12. 1 tbsp Urad dal
  13. 1/4 tsp turmeric
  14. 1/2 lemon 

Preparation:

  • Wash potatoes with water twice.
  • In a vessel add water, salt and potatoes together and boil them. Or, pressure cook potatoes till it is boiled completely.
  • Let the potatoes cool down, peel skin of boiled potatoes.
  • Roughly chop boiled potatoes.
  • Chop onions and green chilies.
  • Take some roasted chana dal in a mixer jar and make roasted chana dal powder.

For Tempering:

  • In a kadhai, heat oil and add mustard seeds.
  • Let mustard seeds pop.
  • Add chana dal, urad dal and let them turn golden brown.
  • Add green chilies, curry leaves, turmeric. Saute them.

How to make Potato masala:

  • Add Chopped onions into the tempering.
  • Let it turn translucent.
  • Add 1 & 1/2 cups of water.
  • Add salt, roughly chopped potatoes and roasted chana dal powder.
  • Mix everything well and let it boil for a while.
  • Lastly, add chopped coriander leaves and squeeze some lemon juice.
  • Mix it. Potato masala is ready to be served.

Peanut Chutney | How to make Peanut chutney | Medley-Of-Flavours

Peanut chutney is most common side dish served with most of the South-Indian dishes. It tastes amazing and compliments every dish served along with it very well. Check of the recipe below.

Ingredients:

  1. 1 cup peanuts
  2. 3-4 green chilies
  3. Salt
  4. Water
  5. 1/4 tsp tamarind
  6. Mustard seeds
  7. 1 tsp oil
  8. Few Curry leaves

Tempering:

  • In a tadka pan, heat a tbsp of oil.
  • Add mustard seeds and let them pop.
  • Add curry leaves and keep it aside

How to make Peanut chutney:

  • In a pan, dry roast peanuts for 6-7 mins for on medium flame.
  • Let it cool down.
  • Remove the skin of peanuts.
  • Add roasted peanuts, tamarind,salt,water into a mixer jar.
  • Blend them together.
  • Remove the mixture into a bowl.
  • Top it with the tempering.
  • Peanut chutney is ready to be served
Time: 15 mins
Servings: 2- 3

Arrabiata Sauce Pasta | How to make Arrabiata Sauce pasta | Medley-Of-Flavours

Everybody loves to have pasta!! Isn't is? But, People usually opt for ready made pasta mix. Did you know it can be very easily made at home that too with very few ingredients? Don't worry check out this amazing recipe of Arrabiata sauce Pasta.


Ingredients:

  1. 1 cup pasta
  2. 3 tomatoes
  3. 1 Onion
  4. 2 tbsp tomato ketchup(Hot & Sweet)
  5. 2 tbsp Chili flakes
  6. 3 tbsp Chopped garlic
  7. Celery
  8. Basil leaves
  9. Salt
  10. Cheese(Optional)
  11. 2 tbsp oil
  12. 1 tsp Olive oil

Preparation:

  • Take 2 tomatoes and make puree out of it, with help of a blender.
  • Finely chop Onions,garlic and celery. 
  • Chop 1 tomato into small pieces.

How to make Arrabiata Sauce:

  • In a pan, heat 2 tbsp oil.
  • Add finely chopped onions, saute for a while by adding a pinch of salt.
  • Add chili flakes,Celery ,tomato puree, tomato ketchup and cook for a while.
  • Arrabiata sauce is ready.

How to make Arrabiata Sauce Pasta:

  • In a vessel add 2 to 3 cups of water, 1 tsp salt & pasta and boil till pasta is cooked.
  • Once pasta is boiled, strain excess water from pasta.
  • Pour some oil on pasta and mix well, so that they do not stick to each other.
  • In other pan, take arrabiata sauce add 3-4 tbsp of water let it boil.
  • Add chopped Tomatoes and basil leaves if available.
  • Now add the cooked pasta into the sauce.
  • Add salt, mix everything well.
  • Arrabiata sauce pasta is ready to be served.

Cooking time: 20-25 mins

Dry palak dal recipe | How to make Dry palak dal | Medley-Of-Flavours

Dry Palak dal is a healthy dal recipe. High in Iron contents and a lots of nutrients also low in calories. It can be served with rice or roti.


Ingredients:

  1. 250 gms Spinach
  2. 1/4 cup Toor dal
  3. 1 tbsp Oil
  4. 1 tsp Mustard seeds
  5. Curry leaves
  6. Salt
  7. Water
  8. 7- 9 Green chilies

Preparation:

  • Chop spinach and green chilies.
  • Wash toor dal twice or thice with water.
  • Pressure cook toor dal in a cooker with water for 2 whistles or till cooked.
  • Let the pressure release completely.

How to make Dry Palak Dal:

  • In a kadhai heat some oil. Add mustard seeds into it and let them splutter.
  • Now, add curry leaves, finely chopped green chilies and chopped spinach saute for a minute or so.
  • Mix cooked toor dal into this. 
  • Add salt to taste.
  • Saute for a while or till everything is mixed well.
  • Garnish it with some coriander leaves.
  • Dry Palak dal is ready to be served.

Tomato Pappu recipe | Tomato Dal | How to make tomato pappu

Tomato pappu/dal is inspired by andhra cuisine and is the most common dal usually served in South India as well. This is usually served with white rice. It tastes good with roti/pulka as well. This dal is slightly tangy in taste as it has tomatoes in it.


Ingredients:

  1. 1/4 cup Toor dal
  2. 3 Tomatoes
  3. 2 Onions
  4. 7 green chilies
  5. 1 tsp red chili powder
  6. Salt
  7. Curry leaves
  8. 1 pinch of Hing
  9. Water
  10. Coriander leaves
  11. Few Spinach leaves
  12. 1/4 tsp turmeric
  13. 2 tbsp Oil
  14. 1/2 tsp Mustard seeds

Preparation:

  • Wash toor dal twice or thrice with water.
  • Wash tomatoes, onions and chop them into large pieces.
  • Wash spinach and chilies. 
  • Chop spinach leaves and split green chilies into two pieces.

How to make tomato dal:

  • In a pressure cooker, add toor dal, chopped tomatoes,onions,green chilies, spinach leaves.
  • Add water till all the ingredients are soaked and cook till 2 whistles.
  • In a kadhai or pan heat oil.
  • Add mustard seeds and let them pop.
  • Now, add curry leaves, hing, turmeric powder.
  • Add the cooked dal into the pan.
  • Add salt, red chili powder and water if required to adjust the consistency.
  • Finally add coriander leaves.

Pudina/Mint Rice Recipe| How to make Pudina/Mint rice | Medley-Of-Flavours

Pudina/Mint rice is a very tasty rice recipe . It is made of cooked rice, tempering of mustard seeds, green peas,pudina/mint paste. It can be served for lunch.

Ingredients:

  1. 1 Cup rice
  2. 3 Green chilies
  3. 2 & 1/4 Cup Water
  4. Salt
  5. 1 tbsp Oil
  6. 1/2 tsp Mustard seeds
  7. Curry leaves
  8. 1/4 cup Peas
  9. 1/2 Cup Mint leaves
  10. 1/4 cup Coriander leaves
  11. 1 tsp ginger garlic paste

Preparation:

  • Take rice in a bowl and wash it with water twice.
  • Take washed rice in a pressure cooker and add water to it.
  • Pressure cook the rice till cooked or for 2 to 3 whistles.
  • Wash coriander leaves and mint leaves.

How to make Pudina/Mint paste:

  • In a mixer jar, take mint leaves and coriander leaves.
  • Add 3 green chilies.
  • Add 1 tsp ginger garlic paste.
  • Grind everything well till it becomes a paste.

For Tempering:

  • In a kadhai heat oil.
  • Add Mustard seeds to the oil and let them pop.
  • Add frozen peas and curry leaves,saute for a while.
  • Add mint/pudina paste and saute.
  • Let it release oil.

How to make Pudina/Mint rice:

  • Add cooked rice to the tempering.
  • Add salt to taste and mix well.
  • Add coriander leaves and lemon juice.
  • Mix everything well.
  • Garnish it with more chopped coriander leaves and serve.

Vangibath recipe | How to make Vangibath | Medley-Of-Flavours

Ingredients:

  1. 5 tbsp Oil
  2. 3 small brinjal
  3. 1 cup Rice
  4. 2 n 1/2 cup water
  5. Curry leaves
  6. 1/4 tsp Turmeric
  7. 1 tsp Chana dal
  8. 2 tsp Urad dal
  9. 2 tbsp Homemade masala powder
  10. Salt
  11. 1 Lemon
  12. Coriander leaves

Preparation:

  • Wash Brinjal, curry leaves, coriander leaves separately twice or thrice with water.
  • Chop brinjal and coriander leaves.
  • Wash rice with water twice.

How to make Vangibath:

  • In a pressure cooker cook rice, water till cooked or for 2 whistles.
  • Let it cool down.
  • In a kadhai heat oil add mustard seeds, let them pop.
  • Add chopped brinjal and saute till it is cooked well.
  • Add chana dal,urad dal curry leaves,turmeric.
  • Saute everything well.
  • Add cooked rice, Homemade masala powder, salt.
  • Squeeze a lemon and mix everything well.
  • Add chopped coriander leaves.
  • Vangibath is ready to serve.
Preparation time: 10 mins
Cooking time: 25 mins

Tip:

  • Make sure rice is completely cooled down to avoid stickiness.
