Wheat Flour Halwa | Aate ka Halwa | Kada Prashad | Medley-Of-Flavours

Wheat flour halwa is a rich, soft and velvety textured halwa.  Also known as Kada Prashad. 

Ingredients:

Preparation:

  1. In a kadai mix ghee and wheat flour together.
  2. Heat the mixture till bubbles are formed and the mixture changes to brown colour.
  3. Boil water and sugar.
  4. Add sugar syrup into the wheat flour mixture.
  5. Stir continuously.
  6. Keep stirring until the mixture releases ghee and leaves the kadai.
  7. Add cardamom powder and mix well.
  8. Garnish it with some almond flakes.

Cooking time: 15 mins

Coconut Coriander Chutney | Medley-Of-Flavours

Coconut Coriander chutney is side dish usually served in South India. Made out of grated coconut, coriander and roasted chana dal as main ingredients. 

Ingredients:

  1. 1/4 cup Roasted chana dal
  2. Few coriander leaves
  3. 1/4 cup grated coconut
  4. 6 green chillies
  5. 3 tbsp water
  6. Salt
  7. 1 tbsp oil
  8. 1 tsp mustard seeds
  9. 1 tsp urad dal
  10. 1 tsp chana dal
  11. 5 curry leaves
  12. 1 red chilly

Preparation:

  • In a mixer jar grind roasted chana dal, coriander, green chillies and coconut.
  • Add water and salt as required.
  • For tempering take some oil in a tadka pan and heat it.
  • Put mustard seeds into oil and let them pop.
  • Add chana dal and urad dal and let them turn golder brown.
  • And the red chilly and curry leaves.
  • Add the tempering into the ground paste.

Onion Fry | Talimpu | Medley-Of-Flavours

Onion fry is a simple less ingredients and tasty dish served with roti, pulka or any Indian bread.

Ingredients:

  1. 6 onions
  2. 2 tsp oil
  3. 1 tsp mustard seeds
  4. 2 tsp urad dal
  5. 10-12 green chillies
  6. Few curry leaves
  7. Salt to taste
  8. Coriander 

Preparation:

  • Chop onions & chillies into pieces.
  • Heat oil in a pan add mustard seeds into it and let them pop.
  • A urad dal and let them turn light brown colour.
  • Add curry leaves & chopped green chillies to it.
  • Then add onions and stir-fry then till onion turns translucent.
  • Add salt to taste and mix well.
  • Garnish with some freshly chopped coriander.

Schezwan Rice | Chinese cuisine | Medley-of-flavours

Schezwan Rice is stir-fried rice in a frying pan with Schezwan chutney. Schezwan chutney is a Chinese chutney. 

Ingredients: 
  • 1 cup rice
  • 3 tbsp oil
  • 1 tsp jeera
  • 2 onions
  • 1/2 cup frozen corn
  • 4 tsp Shezwan chutney
  • Salt
  • Coriander leaves
Method:
  1. Pressure cook 1 cup of rice.
  2. Heat oil in a pan.
  3. Add jeera, chopped onions and let it turn translucent. 
  4. Add Corn to it. Then add schezwan chutney and saute well.
  5. Now add cooked rice and salt mix everything well.
  6. Garnish it with freshly chopped coriander leaves.

Upma | Semolina Upma | Easy recipe | Medley-Of-Flavours

Upma also called as uppit is a think porridge made using sooji or semolina. Most commonly cooked in South India, Maharashtra and Sri Lanka.

Ingredients:

  • 1 cup Sooji / Semolina 
  • 3 cups water
  • 3 tsp oil
  • 1 tsp mustard seeds
  • 1 tsp jeera (optional)
  • 1 tbsp chana dal
  • 1 tbsp urad dal
  • 4-5 curry leaves
  • 6-7 green chillies
  • salt to taste 
  • 1 lemon
  • coriander leaves

Method:

  1. Firstly dry roast sooji in a pan. Till sooji turns light brown color.
  2. In same pan heat some oil . Put mustard seeds into it and let it pop.
  3. Add jeera, chana dal, urad dal and let it turn brown.
  4. Add curry leaves and green chillies to it.
  5. Add water and let it boil, add salt.
  6. Now gradually add sooji into it and stir continuously so that no lumps are formed.
  7. Sometime later bubbles are formed keep mixing continuously.
  8. Pour lemon juice from a lemon to it mix well.
  9. Garnish it with coriander leaves and freshly grated coconut.
  10. Upma is ready to serve.

Oreo Milkshake | Milkshake | Medley-Of-Flavours

Oreo milkshake is a very easily made and one of the famous milkshakes of recent times.

Ingredients:

  • 200 ml Milk
  • 3 tsp sugar
  • 6-7 Oreo biscuits
  • Chocolate syrup

Method:

  • In a juicer or Blender break oreo biscuits.
  • Add milk, few ice cubes and sugar to it.
  • Blend it till the sugar and milk mixes well.
  • Take a serving glass, coat the wall of it with chocolate syrup.
  • Pour oreo milk shake into the glass.
  • Crush an oreo and garnish it on top of milkshake.

Beans Fry | Talimpu | Medley-Of-Flavours

Beans are high in fibre content and nutritional value. Beans talimpu is usually served with rice or roti.

Ingredients:

  • 200 gms beans
  • 6-7 green chillies
  • 2 tbsp vegetable oil
  • 1 tsp mustard seeds
  • 1 tsp chana dal
  • 2 tsp urad dal
  • 4-5 curry leaves
  • 2-3 tbsp freshly grated coconut
  • Salt to taste 

Method:

  1. Chop beans into small pieces.
  2. In a pan heat vegetable oil and add mustard seeds to it.
  3. Let mustard seeds pop.
  4. Add chana dal, urad dal, curry leaves, green chillies and saute well.
  5. Add chopped beans and salt mix them well.
  6. Cook it for 8-10 mins.
  7. Finally add grated coconut and mix everything together.
  8. Beans talimpu is ready to serve.

White Sauce Pasta | Italian Cuisine | Medley-Of-Flavours

Pasta is a staple food of Italian cuisine. White Sauce Pasta is a traditional Italian dish. Basic ingredients to make white sauce are butter, all purpose flour, milk and processed cheese slices/processed cheese.

Ingredients:

  • 1 cup penne pasta
  • capsicum
  • 1/2 cup sweetcorn
  • 3 tsp of all purpose flour/maida
  • 4 tsp butter
  • 1 tsp finely chopped garlic
  • 3 cheese slices
  • 3 cups milk
  • salt to taste
  • 2 tsp oregano
  • 2 tsp chilli flakes
  • 2 tsp crushed pepper

Method:

  1. Boil pasta and sweet corn separately with some salt.
  2. If you are using frozen corn you need not boil it.
  3. Cut capsicum into squares.
  4. Take 1 tsp of butter, once it is hot add finely chopped garlic and let it turn golden brown.
  5. Add corn and capsicum to it. Cook it well then add oregano, chilli flakes, crushed pepper and keep it aside.
  6. In same pan take remaining butter add maida to it and let it turn light golden brown. Do not over cook.
  7. Slowly add milk and mix it simultaneously.Let the milk boil.
  8. Now add cheese into it and mix well.
  9. Add corn and capsicum mixture and boiled penne pasta to it.
  10. Add salt to taste.

Tomato Rasam | Medley-Of-Flavours

Tomato rasam is one of the authentic recipes of South India. Its origin goes back to 10,000-4000 BC. It's a quick and easy recipe made out of tomatoes in few minutes.

Ingredients:

  • 2 tbsp vegetable oil 
  • 3 Tomatoes 
  • 1 tsp mustard seeds
  • 1 tsp jeera
  • 4-5 curry leaves
  • A pinch of asafoetida (hing)
  • Few garlic cloves
  • 1/4 tsp turmeric 
  • 2 cups of water
  • 2 tbsp red chilli powder
  • Salt to taste
  • Coriander

Method:

  • Grind 3 tomatoes in a mixer and keep it aside.
  • Heat vegetable oil in a pan, add muster seeds and let it pop.
  • Add jeera, curry leaves, asafoetida, turmeric, garlic cloves and saute well.
  • Add the tomato puree into the pan and let it boil for few minutes.
  • Later add water, salt, chilli powder and mix well.
  • Let it boil. Finally add some freshly chopped coriander.
  • Serve it in a bowl.

Coconut Rice | Rice Recipe | Medley-Of-Flavours

Coconut rice is usually made of rice with mild coconut flavours like coconut milk/coconut flakes(grated or desiccated). In the below recipe we shall be using fresh grated coconut.


Ingredients:

  • 4 Cups of cooked rice
  • 1 Cup fresh grated coconut
  • 2 tbsp cooking oil
  • 2 tbsp ghee
  • 1 tsp mustard seeds
  • 1 tsp Jeera
  • 2 tbsp urad dal
  • 5 Red chillies
  • 6-7 Pepper corns
  • Few curry leaves
  • Salt to taste
  • Coriander
  • Few cashews (optional)

Method:

  1. Heat 2 tbsp of cooking oil and 2 tbsp of ghee in a pan.
  2. Add mustard seeds and let them pop.
  3. Then add jeera, urad dal, curry leaves, pepper corns into it.
  4. And add coconut and let it turn light golden brown.
  5. Now add cooked rice and salt to taste and mix well.
  6. Garnish it with coriander leaves.
  7. Coconut rice is ready to serve.

Sooji Ka Halwa / Rava Halwa | How to make Sooji Halwa

Sooji ka halwa also called a Sheera is one of the most easiest and quickest dessert  recipes of India. Usually served as holy offering on auspicious occasions.

Ingredients:
  • 1 cup Sooji (Rawa)
  • 1 n 1/2 Cup Sugar
  • 1/2 tsp cardamom powder
  • 3 tbsp ghee / butter
  • 2 cups milk
  • 1 n 1/2 cup water
  • 4-5 almonds
  • 4-5 cashew nuts 
  • 1 tbsp dry grapes

Method:

  • Mix milk and water.
  • Heat 1 tbsp of ghee in a pan and roast almonds cashews and grapes keep it aside. 
  • In same pan add the remaining ghee and add 1 cup of sooji to it. roast the sooji till it turns golden brown colour.
  • Add milk and water mixture into the pan. Boil till the water dries out completely
  • Add sugar and stir well.
  • Add cardamom powder and dry fruits and mix well.
  • And the dish is ready to serve.
