Coconut rice is usually made of rice with mild coconut flavours like coconut milk/coconut flakes(grated or desiccated). In the below recipe we shall be using fresh grated coconut.
Ingredients:
- 4 Cups of cooked rice
- 1 Cup fresh grated coconut
- 2 tbsp cooking oil
- 2 tbsp ghee
- 1 tsp mustard seeds
- 1 tsp Jeera
- 2 tbsp urad dal
- 5 Red chillies
- 6-7 Pepper corns
- Few curry leaves
- Salt to taste
- Coriander
- Few cashews (optional)
Method:
- Heat 2 tbsp of cooking oil and 2 tbsp of ghee in a pan.
- Add mustard seeds and let them pop.
- Then add jeera, urad dal, curry leaves, pepper corns into it.
- And add coconut and let it turn light golden brown.
- Now add cooked rice and salt to taste and mix well.
- Garnish it with coriander leaves.
- Coconut rice is ready to serve.
